Our Yuzu
A citrus fruit from the East that has found a home in Ascona

From East Asia to Ascona
Originally from East Asia and particularly prized in Japanese cuisine, yuzu is a citrus fruit with an intense, distinctive fragrance and notes reminiscent of lemon, mandarin and grapefruit.
In Ascona, too, this remarkable citrus fruit has found favourable growing conditions in the gardens of Castello del Sole. Here, we cultivate our own yuzu trees, whose fruit is generally harvested between late October and early November, depending on the season.

From the tree to our specialities
The distinctive aroma of yuzu takes centre stage in several specialities from Cantina alla Maggia, Terreni alla Maggia and Castello del Sole.
From white wine vinegar infused with yuzu to our gin, yuzu mustard and yuzu fleur de sel prepared by chef Mattias Roock: these products showcase the fragrance and freshness of this citrus fruit, bringing a touch of the East to our creations.
