Baked chicken
with secret sauce and basil noodles


Ingredients - 4 persons
Sauce
- 1 shallot
- Extra virgin olive oil to taste
- 0.5dl Bianco del Ticino DOC "La Lepre"
- 1dl chicken broth
- 2.5dl full cream
- 1c pieno di curry
- 1/2tsp pepper
- 1/2tsp chilli pepper
- a few leaves of dried tarragon
- 3tsp mustard
- 50gr butter
- 1-2tsp cornflour
- Fleur de sel allo yuzu to taste
Preparation
Chicken
Season the chicken with poultry seasoning, yuzu mustard, sage and rosemary
Cook the chicken in the oven for 40min, then add 5-10min on the grill function
Salsa
Brown shallots in olive oil
Deglaze with white wine, allowing the wine to evaporate
Add the stock and cook for a minute. Add the cream, curry, pepper, chilli, tarragon and mustard
Simmer the sauce over a gentle heat for about, 10-15 minutes
Whisk everything together and turn the heat down to low, add butter and salt to taste
Add the cornflour
Keep the heat on low stirring until the chicken is ready
Meanwhile, prepare the basil noodles
Plate the chicken, the noodles and serve the sauce in a small sauce pan which will then be poured over both the chicken and the noodles
