Vinification Light drying on the vine and manual harvesting when the right degree of ripeness is reached between the end of September and the beginning of October. Low-temperature pellicular maceration of the must with the skins
How it looks
Deep golden yellow. Slight turbidity linked to the production style.
Aroma
Very complex and evolving with due oxygenation. Opens with notes of bitter orange peel and alchechengi. This is followed by malty and herbal notes of thyme, oregano and lemon balm. Closes on a trail of liquorice.
Taste
Palate of great depth and softness. Slight tannic and spicy sensations. The wine is dry and very persistent.
Perfect match with
To be paired with complex and elaborate food. Terreni alla Maggia rice with teriyaki eel and yuzu. Veal pate. Full-fat semi-hard cheeses, creamy blue cheeses such as mascarpone gorgonzola.
